Winner of the Gold Medal in the 2019 Taiwan’s Top 10 Products Competition organized by the Council of Agriculture, this was the first product in Taiwan to feature water-milling round grain rice flour made from traceable Japonica No. 9 rice. It is gluten-free and highly digestible, and has a moist, soft, and chewy texture. With an amylose content of 15–22% and amylopectin content of 78–85%, it is suited for making rice milk, rice cakes, rice pancakes, rice noodles, rice cookies, brown sugar steamed cakes, Ningbo rice cakes, Korean rice cakes, and Japanese wagashi.
