A distinctive feature of Manufacture Cluizel is the choice of a slow roasting process, very seldom used in our industry because of its high cost. This technique is perfect for maintaining all the aromatic hints of cocoa and allows for a much more homogeneous roasting, concentrated at the heart of the product. A higher temperature roasting (shorter and cheaper) would burn the beans and develop acid tastes.
Time and temperature parameters are specifically adapted to each of our Premiers Crus in order to optimize aromatic hints.Chocolate is then refined to 18 to 20 microns and conching is performed according to recipes and origins, in order to get a chocolate that is creamy, smooth and free from undesirable acid tastes.
