Food Industry Research and Development Institute(FIRDI, Taiwan) is an important indicator of the development of food science and technology in Taiwan. With the aim of assisting the development of Taiwan's food and biological industries, it is the best R&D partner. Biological Resource Conservation and Research Center (BCRC, Taiwan) is an important R&D unit of FIRDI. BCRC is a systematic and service-oriented biological resource center in the world. In response to the needs of Taiwan's food industry, BCRC collects various microbial resources with food application potential, including the baking yeast bank, lactic acid bacteria bank, traditional fermented food starter bank, beer starter bank, mushroom bank, special flavor yeast bank, and agricultural microorganism bank . At the same time, especially for the needs of the baking and brewing industry, BCRC establish the baking yeast bank, the Levain culture and preservation technology, strain domestication and improvement technology, process development technology and quality control technology, in order to help the industry create differentiated products and optimize industrial competitiveness .
