Showcasing the Diversity of Taiwanese Baking Through Craftsmanship and Classic Flavors
Taichung-based bakery brand Fuman Bakery Garden will take part in this year’s bakery exhibition, presenting a curated selection of its most beloved signature products. From time-honored pastries to refined desserts, the brand highlights its distinctive baking style through consistent production methods and carefully selected ingredients, revealing a meticulous attention to flavor layering and textural detail.
Deeply rooted in the Taiwanese market, Fuman Bakery Garden has long upheld its brand philosophy of being delicious, reassuring, and truly enjoyable over time. Rather than chasing fleeting trends, the brand focuses on refining everyday baking quality. Fuman believes that desserts which genuinely accompany daily life are built on the long-term accumulation of ingredient knowledge, precise ratios, and careful craftsmanship.
At the exhibition, Fuman Bakery Garden will spotlight several signature items. Kim Hua Su is crafted on a crisp cubic puff pastry base, filled with a savory-sweet nougat infused with salted duck egg yolk. Inspired by the image of golden yolk petals in full bloom, each bite reveals delicately unfolding layers, where savory richness and gentle sweetness intertwine in a refined, lingering finish.
Also on display is Ohama En, a creation personally guided by renowned Japanese pastry master Yukio Ohama. Made with an artisan’s spirit, this cheese sponge cake is baked using carefully selected fresh ingredients to achieve a light, airy texture. Paired with a smooth mascarpone cheese filling blended to a proprietary ratio, the dessert offers distinctly different yet equally captivating textures when enjoyed chilled or frozen.
The charmingly shaped Lemon Egg Cake is made with premium Kumamoto flour from Japan, Elle & Vire French dairy cream, and freshly squeezed lemon juice. With a moist, dense cake base coated in white chocolate infused with bright citrus acidity and gentle dairy notes, it delivers a refreshing, well-balanced flavor that remains light on the palate.
In the category of classic pastries, Fuman also presents its Pineapple Cake and Phoenix Pineapple Cake series. The pineapple cake follows traditional methods, using carefully selected local ingredients and a golden-ratio filling that delivers clear, layered textures. The phoenix version finely grinds salted egg yolk into the pineapple filling, enhancing melt-in-the-mouth smoothness and overall balance, resulting in a thin crust, generous filling, and a rich yet non-greasy aroma.
Additionally, the Black Gold Pineapple Cake features a distinctive pastry crust infused with bamboo charcoal powder, paired with a perfectly balanced sweet-and-tangy pineapple filling. The clean, refined character of bamboo charcoal highlights the natural fruit aroma, offering a refreshing interpretation of a classic Taiwanese pastry.
